Easy and delicious french onion soup at home might seem hard to achieve! We all know how delicious french cuisine is, and I think that subconsciously, we give it this aura of something that’s impossible to achieve at home. You couldn’t be more wrong! This recipe is genuinely so easy and tasty, you will definitely want to add it to your weekly meal rotation!

A few tips I have learned along the way
I have tried to make this recipe a couple of times before, and I have never really enjoyed it. “It’s so over-hyped”, I thought. But after researching, I have found this incredible recipe by Chef Jeanne-Piere that has absolutely blown my mind. I highly recommend checking his channel, he is a never ending source of inspiration!
What turned out to completely change this recipe is three key things:
Give your onions time to cook: don’t rush your food. If you need something quick, this might not be the recipe to cook tonight! Your onions will need to cook low and slow for about 30 minutes. The addition of shallots and leeks also really elevated the recipe for me.
Use a good chicken stock: in this case, I have used home made chicken stock. You don’t need to go as far, but definitely do buy a really good quality chicken stock, it is going to make or break the recipe!
Make a Roux: This gives the recipe and incredible amount of creaminess. My previous attempts were always too runny for my taste, but this is just perfect!

Easy and Delicious French Onion Soup at Home

Method
- Start by Slicing your vegetables. You onions should be big enough to have a bite, but not as big as to slide off the spoon as you are eating the soup! Roughly chop your leeks and shallots.

- To a large pan over medium heat, add olive oil, half (60g) your butter and all your sliced vegetables. Season with salt and pepper and cook until golden brown.

- Heat some chicken stock in a small pot.
- To a large pot, make your roux by melting the remaining butter and adding your flour. Cook until the texture resembles wet sand.

- Add your cooked onion with all the cooking juices to the roux.

- Add chicken stock and wine. Cook for at least 30 minutes.

- Plate up, top with some heavy cream and enjoy!
