This pasta is an evergreen in the south of Italy, where I am from. It only requires two ingredients, it’s ready in 10 minutes, and it is sure to leave your guests asking for seconds!

⏲️Cooking time: 10 minutes
Ingredients for 2 portions:
- 200 gr pasta
- 2 Garlic Cloves
- Enough olive oil to coat the bottom of the pan
- Salt and Pepper to taste
- (Optional) Fresh Red Chilli
- (Optional) Parsley to garnish
(1) Set a medium saucepan half full of water on high heat and wait for it to boil.
While you wait, (2) thinly chop your garlic cloves. I use 1 per person.
(3) When your pasta is boiling, add salt to taste. I use 1 big pinch per person. Add your pasta and cook for 2 minutes less than what’s indicated on the box.



(4) Coat the bottom of a medium frying pan with some good quality olive oil and set on medium-high heat.
(5) Once the oil is hot, add garlic and let cook for 1-2 minutes. Add chilli in this phase if you decide to use it.
(6) To prevent garlic from burning, add a ladle of pasta water to the frying pan. Also, save a ladle of pasta water for later.



(7) Add your cooked pasta to the oil pan.
(8) Add a couple more tablespoons of oil and a (9) scoop of pasta water.
Stir together until fully coated. The starches contained in the pasta water will bond with the fat in the oil and make your pasta deliciously creamy and garlicky!
And just like that, your pasta is ready!
