Creamy Salmon Pasta

This pasta is an evergreen in the south of Italy, where I am from. It only requires two ingredients, it’s ready in 10 minutes, and it is sure to leave your guests asking for seconds!

🔪Preparation time: 2 minutes

⏲️Cooking time: 10 minutes

Ingredients for 2 portions:

  • 200 gr Your favourite pasta
  • 200 gr Smoked Salmon
  • 270 ml Double Cream
  • Enough olive oil to coat the bottom of the pan
  • Salt and Pepper to taste
  • (Optional) Parsley to garnish

(1) Set a medium saucepan half full of water on high heat and wait for it to boil.

While you wait, (2) roughly chop your salmon.

(3) When your pasta is boiling, add salt to taste. I use 1 big pinch per person. Add your pasta and cook for 2 minutes less than what’s indicated on the box.

(4) Coat the bottom of a medium frying pan with some good quality olive oil and set on medium-high heat.

(5) Once the oil is hot, add your salmon and let cook for 1-2 minutes.

(6) Add the double cream to your salmon and let cook until reduced to the texture you prefer and add freshly cracked black pepper.

(7) Drain your pasta and add it to the salmon and cream pan.

(8) Stir together and sauté until fully coated.

And just like that, you did it! Your pasta is ready to serve, good job!
