One Pot Chicken Adobo

This One Pot Chicken Adobo is another recipe requested by a fan! I looks like quite a few people follow me from the Philippines,Kamusta kaibigan! Just like the Pad Thai recipe, this one was an incredibly delicious discovery! All you need is a few healthy ingredients and a single pan; let’s get into it!

🔪Preparation time: 20 minutes (at least)

⏲️Cooking time: 30 minutes

Ingredients for 3 portions:

  • 600 gr Chicken Thighs (They must be thighs, no breasts) 
  • 6 garlic Cloves
  • 100 ml Light soy sauce 
  • 120 ml White vinegar
  • dried bay leaves
  • 1 Onoin
  • 2 tbsp Vegetable oil
  •  350 ml Water
  • 2 tbsp Brown Sugar
  • 1 tbsp Black peppercorns
  • Green onion to garnish

Let’s get cooking!

(1) Add 3 thinly minced garlic cloveslight soy sauce, white vinegar, bay leaves and chicken thIghs to a bowl. Let marinade for at least 20 minutes, ideally overnight.

Add 1tbps vegetable oil to a large frying pan over medium-high heat. 

(2) Sear your chicken thighs until browned (Don’t throw away your marinade!), about 1 minute per side. Don’t cook your chicken all the way through! Once browned, set aside.

(3) Thinly slice your Onion and 3 more garlic cloves.

(4) Add 1 tbsp of vegetable oil to the same frying pan and add your chopped onion and 3 thinly minced garlic cloves. Cook 2 minutes, until slightly softened.

(5) Add the marinade you saved from before, brown sugar, water and black peppercorns. Bring to a light simmer and turn the heat down to medium. 

(6) Add your seared chicken thighs back to the pan and cook until the sauce is thickened, 25 minutes, turning occasionally. You will have to trust the process here, as the marinade will look liquid until basically the very last minute! Just let it do its thing, it will pay off at the end!

And just like that, your One Pot Chicken Adobo is ready! You did it, good job! You can either have it on its own or on top of some white rice. Packed with flavour and proteins, this recipe is perfect for a weeknight meal!
