I’ve always loved discovering new cultures through their food, and since my partner is a huge curry fan, I decided to make this easy salmon curry for a change. Personally, I’m obsessed with how the rich, creamy sauce complements the tender fish — even if she still swears by chicken!
This Salmon Curry Ready in 25 Minutes is loaded with fresh veggies and vibrant flavours. I used broccoli for that crisp, al dente texture, but you can easily swap it with spinach, cauliflower, or any green you love. The gentle spice from red curry paste perfectly balances the soft, buttery salmon and sweet onions, creating a beautiful harmony of taste and texture.

- Not a fan of salmon skin? Remove it right after cooking the skin side of your salmon.

Curry Salmon and Broccoli ready in 25 minutes!

- Heat olive oil in a large frying pan over medium-low heat if using stainless steel, medium-high for nonstick.

- Cook your salmon skin down for 4 minutes. Flip and cook for a further 3 minutes. You can remove the skin or keep it, personally I love it so I decided to leave it in.

- Transfer the salmon to the oven to keep warm. In the same pan, add onion, garlic, broccoli florets, curry paste and coconut milk. Mix, add lime zest and juice and let cook for about 8 minutes.

- Add the salmon back into the pan, lower the heat and let cook for a further 4 minutes.

- Top with parsley, plate up and enjoy!
